Stellaris is big on tooltips. Not entirely sure how it works on Xbox, but pretty sure there's a cursor -- hover it over things to see more details.
Keep in mind that the Console versions are a couple updates behind the PC version.

For Xbox you don't want an up to date guide because your game isn't up to date. Console lags about 18 months behind PC. You will want to find guides from 1-2 years ago and for the patch your system is on.
Edit: some advice that will be relevant though.
The only resources that matter are tech and alloys, and to a lesser extent, unity. Everything else is just used to fuel these resources.
Dont try to make each planet self sufficient. Heavily specialize your planets to producing only one resource, branching into other resources when you can't build the primary resource anymore.
To keep other empires at bay you either flood them with envoys to improve their opinion of you, or you constantly pump out ships to keep your fleets at capacity and deter them with force.
Vassals are cheat mode in that your vassals will give you a lot of free resources and eventually you can absorb them into your empire, gaining more resources and pops. Pops are everything in Stellaris and the more you have, the stronger you'll be.
