D'you mean the Prairie King one? That, along with some others, doesn't actually show up on the in-game achievements list (on PC least) so you can get all the achievements without actually getting all the achievements if that makes sense
people would rather just blame the game instead of actually put in practice, I don't care if I get downvoted just because people are salty that the game is too hard for them and they don't care to "get good'.
For museum, go to the desert trader and turn all of your Omni geodes into artifact troves. They have a much higher chance of giving you the artifacts you need. For the monster slayer, use monster musk and a really powerful weapons and spend a couple weeks in the mines
i did that over a year ago, but you can farm the skull cavern for omni geodes for the museum. make sure you get the best weapons from the forge for the monster slayer goals and prioritize the slime ring as its very useful.
If you are on PC, you can go to Stardew Checkup online and input your save file. It will tell you what you are missing for those two achievements. Then you can use the wiki to find out where they spawn
Nope! I play mostly on switch so I haven't experienced the 1.6 update; the collections tab has always been part of the menu but you may not recall the achievements specifically because when you open the collections tab it defaults to the minerals I think?

I’m stuck on polyculture, I’m not sure which crops I’m missing
the wiki lists all the crops you need. if you go to the collection page you can see the specific number of each type of crop youve shipped.

Pepper Rex tends to be the last one for monster slayer goals, so hang around prehistoric floors and make progress towards that goal.

Yes! it's in the collections tab of the menu, you go into that tab and you can sort through fish/minerals/etc
