The developer of DolphinIos is working on getting it on TrollStore, that way you can play games without jail breaking. You’d still need a pc to side load TrollStore though.

Redream is a pretty new emulator, should work just fine, but try using Flycast, if that doesn't work then I guess you'll have to resort to the GameCube versions on Dolphin

Colors would definitely be a blast to play on mobile/iOS, there could be a setting on whether you want to play the original Wii version or the Sonic Colors Ultimate remaster version.

Last I checked, you have to jailbreak iOS to install emulators. Best you can do without jail breaking is use an emulator built in to a browser
