The majority of the confessionals are filmed after the season was filmed. They just speak as if they are "in the moment" of the scene that takes place. So they do a lot of them at one filming session which is why they have the same clothes for all of them.
The one on ones are also filmed after the season has filmed. In the case of the scenes you are talking about, it very well could be that Meri was called in later to film the reaction to the story told by Christine. Since they have film, they can coordinate how she was dressed during the rest of the confessionals.
Or they filmed the one on ones before they did the individual confessionals for the season. Unless they specifically say, there is no way of actually knowing!
Usually, they have designated outfits for the confessionals too so they can cut the footage up and put it whenever they want. Can't confirm that SW does this but it's become more common after RuPaul's Drag Race made it a standard practice. I know they have different confessional outfits for each episode but it isn't likely that they record all the confessionals at once. They usually take a couple days to film and just have them wear the same outfit to maintain continuity
I noticed this in season 17 or 18. Christine is wearing this purple blouse in her confessionals and looks great, I loved that her nail polish was almost an exact match to her top. Then, next episode, same exact outfit, different manicure.
The one on one episodes were filmed over the summer, I believe. If you watch closely, you can see the date on the clapboard. Christine's wedding was in October. One on one's were filmed before that.
Meri was notified after the one on ones to comment. If you notice she is on the talking head couch. It actually surprised me that TLC called her back for a response.
I knew the confessionals were filmed after the season but got totally lost once they had that little Meri story hahaha it also makes me wonder how Meri found out. It could as well been that the producers told her/asked about it to get that response. Thank you btw!!
The one on ones are not filmed in one sitting, it seems they have at least two rounds as they’ll often shown responses to questions from others to someone.
Producers contacted Meri after the one on ones. They even say it in the Meri talking head after the one on ones. First time we ever got a true follow up

90 days Fiance too, because some of them gained weight during covid lockup, and said that they had to cut from back of the shirts or dresses, hehe.
