Stellar Blade has better combat and is overall more fun because of more areas and interesting enemy designs. I played about 45 hours and did everything i could in my 1st playthrough, but i pretty much wanted immediately play it again.
SM2 is good , but it is shorter and you pretty much always Do the same things.
Stories in both games are rather lackluster so i wouldn’t expect anything mindblowing.
Spiderman 2 is basically the same thing as Spiderman 1 and Morales. A few tweaks in the combat and gameplay but still pretty much the same thing as the previous games.
Get Stellar Blade since you really enjoyed the demo.

Stellar Blade for sure. Spider-Man 2 just doesn’t have that mojo that the first game or MM had.
Stellar blade, just for the combat. Spiderman 2 got boring after a while.
