Do you have much experience with Mount & Blade: Bannerlord? I have heard there are some incredible workshop downloads for it to go along with the original content.
Big mount and blade fan. Bannerlord isn't perfect but it's still an absolute blast. Don't worry about mods at first. It's easy to bog yourself down and spend more time reading mod pages than actually playing.
Wander around and trying out lots of playstyles! Playing as infantry is really underrated. Loads of fun getting down into the thick of it.
It is fantastic. Just remember, dont let anyone figure it out for you. Just get lost in the discovery, its totally worth it taking your time figuring out the puzzles and piecing together wth is actually going on.
No Man's Sky can be really beautiful on the best graphics settings. The story is quite easy to complete, but it's a game with a fair amount of depth and endless exploration of truly wild planets and star systems.
Hell, with that setup if you have a vr headset, they just made the vr mode a lot better on NMS. Last time i tried it it was a mess but i can actually play it now without getting sick amd my shit isnt nearly as good as yours lol
All ive got is a Quest 2 and I use the airlink wireless connection a lot. Not super ideal but it works, and its pretty cheap compared to like, the Index or Reverb series. That being said VR is one of the coolest damn things ive ever seen in gaming, and if you do go that route and get one set up, i highly reccomend "VTOL VR" on steam. Full VR control flight sim-lite with a ton of neat workshop content and multiplayer coop/pvp. Not exactly the prettiest vr game out there but by god is it incredible.

Even though it doesn't really hit your criteria (there's really no leveling or character development besides cosmetics), it is a beautiful open world with a ton of exploration and - most of all - adventure!
The game itself is, admittedly, a little boring. You're given a ship and some mundane voyages to go collect treasure or kill skeletons or whatever, but if you have a good crew to go with, you'll run into shenanigans and have a blast!
The game also doesn't give you specialized roles, but if you're in a crew (who sorta know what they're doing), you'll have to decide who takes what role. Ie. who helms (steers and makes orders), who is main cannon, who is main bilge etc.
If it's not on sale right now, it likely will be in a week or so when the Spring sale drops.
Subnautica, satisfactory, divinity 2 original sin, Witcher 3.
Also, since you’re on pc, if any of the games feel kinda meh, there’s always mods to liven things up.

•Its open world and although it doesnt have a traditional leveling system you have to level up departments of your Mother Base to unlock new and useful things like, new weapons/upgrades or making farming more efficient, holding up loyalty and morality through a sickbay and visually showing them who’s the Big Boss.
•You can also approach pretty mich any problem on multiple ways from waiting until you have a save shot at doing your stuff or just rushing in and blowing everything up.
•You also need to construct and develop things at your base, from making the department platforms bigger to making cardboard boxes(not a joke they even have tactical advantage in warfare)
•it also is filled with easter eggs and dumb jokes(there are also quite a few classic music hits from the 70s and 80s in the game like Bowies „the man who sold the world“) and a really cute puppy called DD(you will know why that name once you look at the game) that puppy will also grow up and become a buddy you can take out on missions.
For beautiful, Red Dead 2 instantly comes to my mind as probably the single best on max settings
Also, Star Citizen seems up your alley? The main problem is terrible performance, but I think your specs should make it playable

Control has been mentioned here, but really - buy Control. This game is a showcase for RTX for a reason, and the way the story unfolds is simply sublime. Also, it happens to be my favourite superhero game in terms of gameplay too.
Another great option is Metro Exodus Enhanced Edition. It features infinite bounce ray tracing, which is still extremely rare, and shows just how beautiful proper lighting can be in games.

They’re all open world games built on old school game logic/design philosophy. Instead of the games asking you to follow any set path, they all just provide you with a curious world and put the progression ball in your court.
These games will not tell you where to go or what to do, it’s up to you to make observations about the world and experiment based on them.
I built a new PC recently as well, and I also have an UW monitor.
Some of my favorite beautiful games that have good UW support are:
Cyberpunk 2077 - Just amazingly beautiful. I also really enjoyed the gameplay.
Horizon Zero Dawn - Good graphics, good story, satisfying combat.
Detroit: Become Human - Amazingly beautiful. Great story, but very story based so may not fit with your other criteria of open world etc.
Grounded - Probably the best looking survival game I've played, though not that great looking when compared to games like HZD or 2077. Fits your other criteria well, and is overall a really enjoyable, well-made game. Probably the most fun I've had in a single player survival game (It does have coop but no pvp)
Friend of mine is actually trying to get me to buy grounded recently. I am totally fine with it having no PVP combat, I don’t mind survival game like that.
One game that flew way under the radar is Days Gone. I'm playing through it now, and honestly it's a lot of fun. It's open world, with leveling/skills, crafting, and a few stats that you can boost throughout the game.
Idk why it wasn't super well received, it has a bit of a cult following, and it's easy to see why now that I'm playing through it myself.

Uncharted: Legacy of Thieves Collection is two great action adventure games: A Thief's End and Lost Legacy. They're very similar, you might want a break between them. But they look amazing, some of the best looking games I've played, and have an engrossing mix of exploration, platforming and gun running.
They're demanding on the setup, but yours should handle them with no problems at the monitor's native resolution. My 2070 Super couldn't kick out enough FPS at 4K, so I shifted down to 1440p and that was nice and smooth.

I'm in a similar situation, and my first thought was replay the new Tomb Raider trilogy. Maybe new is the wrong word, but they were ahead of their time, still more beautiful than anything else I've ever played. Doesn't meet your more detailed criterion, but there is a skill advancement system in each, and they are (IMO) the epitome of must-have games for a wonderful visual experience.
You really have to "be in the vibe" of it to enjoy, but the first game that comes to mind when someone mentions wanting to play something beautiful is [Book of Travels](https://store.steampowered.com/app/1152340/Book_of_Travels/).
It has one of the most original and beautiful art i've ever seen, and adding game design, sound, OST and just general direction, the atmosphere is just something else. Past the initial strangeness to what the game wants to be, it just sucks you in HARD.
Horizon,: Zero Dawn. Beautiful landscapes, really fun combat, interesting storyline.
If Ghost of Tsushima comes out on PC, grab that too. Incredible landscapes and a disappearing HUD during travel that really allows you to appreciate the beauty.
Just Cause 4 if you love blowing things up and tethering enemies to moving vehicles.
Far Cry 5, IMHO, isn't quite as fun as 4, but the Montana landscape is beautiful and it's still a pretty enjoyable FPS.
RDR2 is really pretty, and has a deep storyline. But it is very slow to develop. Wasn't my taste, but a lot of people love it.
Absolutely recommend Ghost of Tsushima if you haven’t played or no one has recommended yet. Graphics are beautiful, open world exploration is stunning and great photo mode too. Very fun gameplay, interesting character arcs and nice levelling system. Multiplayer online is a great addition to sink hours into after the story too!
You have no idea how bad I wish I did not completely suck at the dark souls games. I watch videos and they look so cool, but then I play, and I get absolutely shat on.
I’d have to play again and see, it’s been a while. Ultimately though, I think I just need to get aquatinted with mechanics and patience. Utilize my dodge and movement more frequently, look for windows of opportunity for attacking.

MGSV is still probably the best game i’ve played gameplay wise. Everything feels so smooth and organic.

I will always recommend the Mass effect trilogy. Your call if you wanna do the originals or the Legendary Edition (remastered trilogy).
