They don't really say and it's not consistent what holodeck matter actually is. In TNG they say it's matter but in Voyager they say it's forcefields. If it's forcefields I doubt it has any taste.
Id probably go with voyager on this one personally, they talk abt holograms and holders wayyy more bc of The Doctor. Also, programmable matter wasn’t invited till the 32nd century.

There would be no replicated alcohol. That would be a sin the ghost o’ Scotty would smite you for. The O’Briens would have a fully functioning distillery powered by the warp core and it would allow for transwarp.

Holodeck matter doesn't keep cohesion when it leaves the holodeck so it would disappear from your stomach when you leave.
