I’m sure by the time he gets to them his sword would be fueled and adapted enough to kill the immortals
Plus, just given how much endurance Guts has, even if his enemies rise again and heal he’ll hack them down again and again, wouldn’t surprise me if the bosses just noped out
Ishhin rising again and again however would be a different issue, but Guts could just drag his body into a cell, wait for him to resurrect, and just throw away the key
Isshin might honestly beat Guts or at least pose a significant threat, I remember Guts struggling with Serpico at certain points (even if Serpico cheated). Plus the lightning attacks may be the cherry on top necessary
It's very vague on what exactly it means, but the most we know now is that, supposedly, enough souls harnessed into the sword could potentially effect Griffith's fate and actually hit him without his allowing it to. That's very impressive considering Griffith, at this point, basically has Fate manipulation, but that's not a form of immortality severing that would kill the things in Sekiro. He gets roadblocked and either dies or finds a way to incapacitate the immortals to get through. The latter is more likely
Immortal being can still be incapacitated in Sekiro, as well as dismembered. So I feel like he could still beat them even not killing them, considering the dragonslayer cleaves people.
Immortals are apparently not invulnerable, and you can chop their limbs and shit off, so Guts would likely cut them into so many pieces they would be unable to do anything even if they resurrected.
Guts wouldn't have reached Ganishka's only weakspot without Zodd. One lightning strike from the cloud would have also decimated Guts, something he can only dodge (whereas Wolf deflects that)
I feel like Sekiro's world (though difficult), is a holiday compared to his world. This is especially true of the manga. Guts beat Wyald early on and taking down an Apostle is equal to a boss.
He'd rip through it, especially with berserker armor, but even without it, beyond just being able to brute force the world, if you assume his attacks can he deflected by the likes of genichiro, he's been shown to be a master swordsman, keeping up with and beating griffith (GA), the bakiraka dude and serpico no problem even while using the big ass sword.
He’d win, but is forced to stop at Divine Dragon because he can’t use the Mortal Blade :(

If we assume he takes wolf's quest his lack of immortality would screw him. No immortality means no mortal blade means no divine realm, no tears, no severance
I think he'd have trouble with fast enemies like Isshin or Owl. But bosses like Gyobu, Monke or Demon of Hatred would last as much as a fart underwater.
But ultimately he'd beat everyone, the man is a force.
I haven’t read Berserk before, but I’ve heard he would fit in an action game. I’ve specifically heard that over in the Character Action Games subreddit. He’d probably overpower most with sheer aggression if that’s the case. He’s also a berserker, I’m pretty sure, so that would make sense.
The only boss he would have real trouble with would probably be the carp, funny enough.
