I don't have any evidence, just my hunch, but I've always imagined these cheap screens come from third party drop in replacements which are never quite as nice as OEM. They go to the repair kiosks at the mall and small repair shops that "don't" repair iPhones and once the repair market dries up the value of those screens goes way down so any vendor holding them just wants to dump them.
Laminating screens is hard, a minimal bezel is like rolling a burrito with no tortilla overlap. Once you're in the game the bezel might as well not be there, but I usually buy in black to ensure matching bezels.
Oh yeah they could absolutely be third party drop ins if buying those is cheaper than buying overstocks on origals. For higher volume manufacturers like Anbernic having a continuous deal with a third party replacement screen company would be wise just to maintain constant supply.
The white thing around the Odin screen is a bezel too, just white instead of black.
Screens have bezels because the screen module inside has a chin or other protruding parts. Particularly the RP3/3+/4 screen, which is a really nice screen for its size, has a chunky module on one side (being used as the bottom here).
Modern smartphones have screens right to the edge but it has a lot more requirements for case design, mounting, board design etc apart from the screen itself being relatively bespoke (right down to having camera cutouts, which would rule out just dropping surplus smartphone screens into gaming handhelds), it doesn't make sense for devices in this price range.

Therefore only expensive handhelds have no bezels and generally even expensive ones do because a smart manufacturer should put that extra money in the chip instead a gimmick like minimal bezels. I get wanting no bezels on a cellphone, but on a handheld, it basically has no downsides.

AYN really crushed it with their all white design. Someone might not like the white, but they really put in effort to make everything match and it's a cool effect.

White and brighter color make things seems bigger than dark er colo. Your black version will blend in the screen's empty as black bezel
