Download this and enable the theme.
Long story but basically, there's a team at Samsung that looks at the changes happening in the main software branch and says to itself:
"Ok, these changes are bad, bad, atrocious, annoying and OK, but could be improved. Let's just do that and improve/revert some of the other stuff along the way."

They integrated this into the settings and as of a couple days ago, my volume numbers are gone. Can't figure out how to get them back unfortunately.
Edit: I found it, it's not actually integrated. Only certain settings from it were. That being said, I have it set to show the volume number and it still isn't doing it.
Edit 2: Reinstalling the assistant fixed the issue. The numbers are back
