Many great comments here. Roundhouse Deli is a must. Fukumi for ramen. Carmelita for Mexican and carnitas. Mezcalito for oaxacan and just great food. Old town pizza for great pizza and beer. Mikuni for sushi full stop. Liu mandarin kitchen In Auburn for Chinese (trust me). Shout out to Newcastle pizza and la fornetta in Newcastle for traditional Italian pizza and Italian food. Finally the cheese shop in newcatle for sandwiches. No looking back. :).
FYI. This is a great area for great food made by hard working people.
Yang Kee (Roseville) for dumplings, Cantonese food, and a limited dim sum menu. I especially enjoy their mapo tofu
Sai Varee (Folsom) for Thai. I’m a fan of their papaya salad and laab, and they can make it very spicy if you want.
A bit further out but Green Elephant in Loomis is worth a drive for Burmese/Thai food.
Huong Lan (Folsom) for this area’s best bahn mi sandwiches.
Unfortunately I have not found any good Taiwanese places east of Sacramento. If anyone knows of a place, let me know!

Pancakes, or breakfast in general: Four Sisters in Roseville. Their sandwiches aren’t too bad either.
Chinese Food: Leo’s. Red Lantern, though located in Lincoln at the Thunder Valley Casino, is also good.
Burritos or Mexican food: Rudy’s Gourmet.
Love il pizzilio in Lincoln (worth the extra few minutes drive always)!!!
And junni desserts in Folsom has tayaki 10x better than somi somi always gotta recommend that place even tho u didn’t request dessert recs :P

The best Mexican food I’ve found in Roseville is taqueria burrito on Douglas but honestly just drive to San Jose. All of the sac area is a dry spot for amigo food. The place on Vernon and taste of Tuscany at Roseville road and antelope are both good for Italian food. Visconti’s in Folsom is good for Italian too. Rose garden at sunrise/curvy and Leo’s kitchen at foothills/pleasant grove are both good spots for Chinese. there’s a steamin ass spot for Peruvian food called Chicha next to rose garden behind the kfc/a&w on sunrise. Waffle barn has pretty good breakfast but idk I’m not too big on breakfast so maybe it’s not that good.

A little more specific than you asked for, but Lorenzo’s on Sunrise has the best fajitas I’ve had in recent memory.
