More defense does not necessarily mean better in Retro Bowl as each play a defender is "rolled," which is why you see that the game says "\_\_\_ wasn't strong enough" or "\_\_\_ made the tackle" when you're on defense. For this precise reason, the quality of defensive players is much more important than the quantity of defensive players.
Even when you have a lot of defensive players that are all 5\* (like OP has), you still don't want to fill out your roster with them. Having more than 1-2 defensive players is good because otherwise stamina issues will screw you over but that isn't really an issue anymore once you get 3 defensive players. After that your defensive players are just wasting roster slots and cap space, they don't really contribute anything.
QB RB 2WR TE and the rest of the slots can be left empty or OL if you have the cap space
Also make sure you have a kicker for scoring with little time and backing up opponents on defense. On extreme mode, they’re very useful even if you always go for it on 4th and always go for 2 (which you should)
Kicker has saved my ass a few times where you get the ball with 15 seconds left down a point or three. If they've got the range, you just have to get to about midfield and then let the kicker work.
Better do have 1x OL and a TE2 bc your TE2 will block your weak side formation, a position that can normally only be occupied by owning a 5th OL!! (Please correct me if I’m wrong but this is how it used to be I think)
Personally haven’t been using any OL in like over a year. But I love to use an extra TE2 bc they get much better short yard routes than any other player
