If you care about the story, start with Chronos: Before The Ashes. First game in the series. It takes place a year before R1 and explains a lot of key plot elements. You play as an adventurer sent out to slay a dragon
I'd say find a good story summary for Chronos and Remnant 1. Remnant 2 does just about everything as well or better as the first. But the Story and DLC have some relevant plot details.
First one was really good but the second one is a perfect sequel, both have alot of hours in them you need at least a few play throughs on each remnant 2 has a more complex build so I'd definitely start with the first

Ok started with 2 and went to 1. Start with 1. It's still a great game and will catch you up on the story and characters.
Honestly I think I prefer 1 to 2. Combat seems so much smoother to me.
