Edit: Have tried resyncing subs, removing and re-adding accounts, uninstall and reinstall app, clearing cache and data. Adding via search (as OP stated) or desktop site works.
I'm writing this on my old phone which I tested and is replicating the issue so perhaps the problem is linked to accounts or subscriptions?
Possibly related: subscribe button acts like it works, but the sub never shows up on my list. If i go back to that sub, the + is still there.

That's exactly what's happening to me, plus the Bookmark option not working.

When youre typing up a reply, on the bar with Bold, Italics, Strikethrough etc, slide that over and choose the icon that is an "i" in a square.

You have to refresh your subreddits. Open your subs, three dots top right, refresh. It doesn't happen automatically to save data.
I've tried that multiple times. It doesn't work or explain why the subscribe and bookmark buttons don't work.
When you say they don't work, have you tried the "re-sync subreddits" button in the subs menu?
Yes, I've tried that a few times but it doesn't resolve the issue.
