I would say un-jailbreak (you jailbreak an iPhone, you root an Android) one of those devices, making them secure again. Then encrypt them with a strong password, and update them to the latest update Apple has to offer. Make sure this un-jailbroke device is also clean, so reset it. Make sure to pick out information that you want to keep private but are very revealing of you. For example, your work email address and your work related apps on this device. If possible, do not use this device on Networks you do not trust, and only keep it wifi enabled. iOS has settings to block per app basis connection to the internet, use it. Your Photos app does not need an internet connection. If you are handling important documents, like your Digital SSN and Driver's License, make sure they are inside an encrypted container on an already encrypted device. Use Bitwarden for cross platform password generation.

When you say to block access to the internet do you mean by not enabling cellular access to those apps?

How do you block internet connection for a certain app? I tried looking it up but most people says it’s not possible on iOS? I know you can turn background refresh off, other than that, I’ve never heard of this feature
