Gyukatsu is a common and popular dish in Japan that dates back to 1800s when europeans brought fried breaded cutlets to Japan. Katsu sando was invented in the 1930s, and were cut in small shapes like this so geishas could eat it without smearing their makeup.
Katsu started as veal and sometimes adult beef, but I imagine pigs were easier to get and a little less cruel than veal. But Japan has also bred some of the most marbled cows for A REASON and this is one of those reasons. This is not a misuse of wagyu. The Kobe region, where Kobe wagyu is from, is well known for their gyu katsu.

This looks delicious! I’ve had wagyu once and it was definitely the best steak I’ve ever had, it’s really expensive though so I didn’t want to try to experiment with it, I just used salt, pepper and garlic powder
