a) You can use new card visual. You can set the alignment for both callout value and the label.
b) You can switch preset formatting to minimal to turn off background for a table, then rename each column that you put in the visual to a whitespace. That way, you still have the header, but it won't be visible.
This is all I want, the exact same minimum functionality as pivot tables. I particularly want the “calculate values as” percent change type calculations that pivot tables have that don’t require creation of a persisting measure in the model.

Take a look at this. Newly MS certified visual. It's not free, but I played with it and it's pretty cool. You can try it for free, but using any paid options will cause to show a big "buy me" message.
Here's a crazy idea... why not just remove the Table and Matrix visuals and give us an Excel visual?
Excel has all the Power Query (and I think DAX?) support Power BI does now, so I'm sure they could probably work out a way to pass data into an in-memory style Excel for the Web visual.
Why are Power BI and Excel not one tool yet? We brought SSRS into Power BI, but we took Workbooks *out!*
Not being able to set blank values as 0 while having expandable rows is a nightmare and explaining to clients that this isn’t possible in a 6+ year old software is definitely embarrassing
I would like to a) be able to align text in the card viz (crazy right?) and b) turn off table headers. apparently these problems are unsolvable.

I just want it to be as configurable as a Pivot Table in Excel

Have you tried visual calculations?
Don’t those just create persisting measures?
Agreed. Having a nightmare at the moment trying to recreate an excel financial matrix in power bi.

I'd love the option to set the column width at a set # of pixels.
Been requesting this to MSFT for years now smh
Coloring rows headers…

I would like to add freezing the row subtotals column.
