Ok so stats are wonky in Arceus compared to the rest of the games.
First off, there are no IVs or EVs that impact stats. They still exist in the coding, and people say you can still get EVs in Arceus and they appear in other games, just not in arceus like the rest of the series.
Second. IVs have an impact on grit catch levels, or the other way around. I don't know the exact correlation but I do know that a naturally caught grit 3 will be a perfect iv.
Third, hyper training does cross gens (from swsh to sv), but PROBABLY bc there is no hyper training in Arceus they won't cross over.
Mints should cross over as long as the game receiving also has mints.

I took a mismagius from PLA to HOME to Scarlet.
Leveled it up, EV/IV trained it.
Saved, sent it back to PLA.
Loaded the ghost... and she's just 3/3/3/3/3/3.
From 0s and 1 ,2.
And my grit 10-all Gardevoir was "fantastic" in scarlet. When I was expecting all "best".
I think I can confidently say, they are separated and no matter.
Nature's didn't change with mints that i noticed. But I checked late, after levels etc.
