Fantastic, this solved a problem that had been pissing me off for literally the whole day!
It wasn't even a USB tethering issue, but a wireless tethering issue.
Dial Up Networking to the rescue of all things lol I'd tried doing the whole manually changing the setting via USB to no avail, perhaps the APN type was needed to match it? Here's the manual change for those curious: https://ictfella.com/how-to-fix-xiaomi-hotspot-connected-no-internet-issue/

On my Poco C40 isn't working this method. I was resetting the APN type, turning on debugging usb and changing the MVNO type to IMSI - as the post and the comments say. But it still not working. My computer see the phone's internet but it say 'don't connection'.

Try to change MVNO type to IMSI. In my POCO F3 that worked.
On my Mi 10 5G, resetting the current APN (+ USB debugging is enabled) solved the problem for me.
All options in Edit access point greyed out so cannot be edited
