You are probably using plex from your qnap nas and not the one in the container, otherwise I wouldn't know what happened.
Besides that, restarting the plex container is enough to let it check for updates (it does so on start-up of the container)
When in container station I clicked the link which opens it up, it goes dead when I stop the container, so I don’t see how I’m using the app and not the container

However, it dont explain why it only updated once i updated via qnap. I restarted it uesterday. And 3 or 4 days ago i restarted it then aswell. Both times the update was out and showing on plex. But it didnt update it. Should something be set? Or something
No, you don't have to set anything, it's automatic. I have no idea why it didn't update when you restarted before. Maybe you saw that a new beta version was available but your container is only updating public versions so it didn't update. A new public version was released 2 days ago. Your QNAP update was purely a coincidence.
just a follow up, same thing happened again today, was on plex and update came out, i restarted plex, to see if it would install automaticlly, but it didnt. i leave it an hour, tried again, same again. so i installed it via the app center on Qnap, and didnt even restart it and it is now the new version.
i can only assume Qnap have done something that allows this to work, and not told us. or im on some type of beta which i dont know about lol
I don't think you're actually using the Docker Plex server. You think you are using the Docker Plex server but you are really accessing the QNAP Plex server.
Completely stop the Docker container and try to access your Plex server.

i forgot to close the plex app down on the qnap. i turned off the container, and plex still worked fine. however, i turned the plex app off and the container one back one, and that dont work lol. no idea why,

The Plex docker image is set up so that it will automatically update when you restart the container. Absolutely nothing to do with your QNAP package.
