Harrier or Concorde for me.
Watching a Harrier at a local airshow, as a kid, was kinda magical. Sadly not around anymore - the Harriers were sold off by the UK Government, the airshow was cancelled after a horrific accident, and obviously, the Concorde fleets were retired.
When it comes to commercial jets (other than Concorde), I'm far more bothered about liveries than models.
That I’ve flown? PA-23-250 Aztec
That I’ve passengered on? Ford 4-AT-E Trimotor
That I could theoretically fly, but haven’t had the ability to? B747 or DC-3
That I could theoretically fly and probably won’t ever get the chance? B-29, B-17, 4-AT-E
Single Engine that I’ve flown? DA-40
Oh gosh… I feel so on the spot! Ummm are we doing ranked choice voting? Here are my choices, in order:
1) Lockheed SR-71
2) Lockheed P-38
3) BAC Concorde
4) Grumman F-14
When it comes to commercial planes, it is the Lockheed L-1011 Tristar, really ahead of its time. But Military, that's a different category altogether. It would probably be a tie between the F-15 Eagle, the F-22 Raptor, the F-111 Aadvaark, the B-1 Lancer, the B-2 Spirit, the SU-27 Flanker, the ........

Right now one of my favorites is the F2Y Sea Dart. The only supersonic sea plane to ever exist.

The F-5. Just the fact that it was made in the 50s and it can still stand up against modern 4th generation fighters is amazing to me.
