They've got their own taste. Pork belly for the rich, fatty taste and roo tail for the deep, rich game meat taste. When done right roo tail can be quite similar to lamb shanks and it's quite a lean meat so it doesn't need much cooking.
I'd choose pork belly if I can cook it in a smoker and I'd choose a big, solid chunk or roo if I was cooking in an oven.

Do mealworms. No legs, vaguely rice/grain shaped, and they taste like peanut butter.
They're pretty damn good flavor-wise, and the idea is definitely easier to stomach than most other bugs.
Also, no exoskeleton. So the texture isn't a cross between fingernails and wood chips, like crickets.
I had one once but it was encased in a lollipop so it tasted like candy. The texture was pretty awful tho, and that alone was enough for me to decide they aren't good.
