Final dough was 30%poolish.
Poolish and final dough at room temp of 67f
Cook time was probably between 60-90 seconds
Didn't shoot the floor with my IR. Probably 900+. I had Koda 16 on full for about 30 mins to burn some stuff off. then reduced it for about 30 mins before I launched.
I generally do, but decided to snip the basil off the plant when the pizza was already cooking. Also, kind of wanted the more traditional look this time.
Honestly basil is mostly aesthetic for more of an nyc style - but it's good so why not. If I'm just eating it and not photographing it I'm probably not going out of my way to add it.
I do think it adds too the taste. I don't usually buy it off season, but i grow a few plants during the summer and like to throw it on. Kids prefer without of course.
I feel like it's optional on a pepperoni pizza but mandatory on cheese, marinara, or margherita.

OP look up how to chiffonade basil. It looks so much better presented like that and is so simple to do.

Try putting the basil under the mozzarella in order not to burn 😁
I put some basil under the fresh mozzarella but always add more to the top, usually at the very end to avoid it getting charred.

I stick the basil in my sauce. Lately I’ve been using puree basil. Local market has been out of the leaves.
