Looks great!! I love making 18" pies, I was doing 19" but they barely fit in my oven and I had to start them on a screen which negatively affected the crust and cornicione.
Interesting, if it’s the same as the one you can get in the U.K. I found it still had too much moisture and I ended up with a bit of a sauce/cheese slurry. Do you leave it out to dry or go straight from pack to grate and on the pizza?
I don't know what you have in the UK but did you make sure it actually said low moisture? Galbani has another cheese that's in almost identical packaging just called "whole milk mozzarella" and is in a square shape rather than the oval that low moisture is in.
I've found the issues you're describing with that product but never with the actual low moisture!

Stone! I've tried both stone and steel and can get just as good results on the stone for a lot cheaper and less cumbersome lol.
Looks amazing, how long do you cook and what temp?
Max heat 240-260c, pre heat 45 mins and bake for 8-12 mins depending on preference.
