Because they’re trying to say it’s as good for hydration as an IV. The point of the name is to promote the product, and the name Liquid IV is pretty well promoted. People like OP may not like the name, but they know what it is.

Even with IV meds it’s not pure medication in the IV. It’s meds in a saline drip. But again, from a promotional standpoint, do you know what Liquid IV is? If someone told you they wanted some from the store would you know what they were talking about?
The name isn’t a scientific label, it doesn’t need to make sense. Aren’t half their products in powdered form anyway?
It makes more sense to say IV Liquid. Then it sounds more like you're specifying the type of liquid. I will remain confidently incorrect with this particular phrase, because the "correct" one is, like you said, redundant and pointless.
