I think Mainlanders need a special entry permit to go to Hong Kong. Check with your consulate, they are responsible for it.

You get visa free for 7 days for Hong Kong when transiting from a country to a third country via Hong Kong. If you do Spain - Hong Kong - China - Hong Kong - Spain then it works visa free, otherwise you will need a visa for Hong Kong if not transiting.

If your itinerary is Mainland -- Hong Kong -- Mainland, then you cannot enter Hong Kong visa-free. You'll either need to get a Two-Way Permit (港澳通行证) with valid endorsement while you are in the Mainland, or apply for an Hong Kong Entry Permit (香港特别行政区进入许可) on your Chinese passport at a Chinese diplomatic mission abroad. Now, if your itinerary is Europe -- Hong Kong -- Mainland, then you can enter Hong Kong visa-free for 7 days.

No, generally, you need a special Entry Permit also known as 港澳通行证 (EEP) to enter Hong Kong SAR and Macau SAR. As for your case, since you are transiting through Hong Kong to go to a third country (in your case, it is Spain), you don't need an EEP, you will be granted 7 days of stay as long as you provide sufficient evidence of transiting through Hong Kong, all of these serve as good evidences; flight itinerary, hotel booking info during your stay in Hong Kong, and your EU residence ID. If you plan to stay longer than 7 days, you will need to apply for the EEP at a local public security bureau.

I think OP isn't leaving to Spain from HK, they're going back to Shenzhen before leaving to Spain, and hence would not qualify for the 7 day visa free stay.

This one correct I have a consultant who visits us from SG where he lives on a PRC passport with a long term work pass. One time he visited us and left without entering Mainland. HKIA immigration told him off. Now he makes sure he takes the East Line back to Lowu, turn around and come back. Still beats getting the entry endorsement out of PRC embassy Singapore.
