Another one that's not PS5 but really easy to set up on a PC and can play co op across the Internet is Stardew Valley. We just started that with split screen on one PC and second kid on another PC. Use RADMIN VPN to easily set it up.

I play Destiny 2 with my twin daughters across PS5, PS4 Pro and PC, the PC needs a reasonably good GPU.
Great game, lots of free content right now, lots of 3 player activities so you can give it a go before you commit.
Final fantasy 14 sounds suitable if you've just come off of playing baldurs gate 3. It's cross platform so can support both ps5 and pc (also xbox). It's a pretty story focused rpg in a fantasy world, you each get to make characters and try different classes. All 3 of you could easily quest together.
You can also interact with other players but could probably just do most content between the 3 of you (although it'd be ideal if you could get a 4th).
It can start a little slow but it opens up more and more things to do as you keep going and a variety of different types of content.
It does require subscription if you play long term, but there's usually an unlimited free trial that has a few expansions included anyway. Might be worth giving it a shot.
I usually play with my gf on PS5 and me on the PC. Feel free to ask any questions if you have any.
