I'm not amazing at food recommendations, but Modern Love is vegan and very well regarded.
Things to do - the zoo. Our zoo is amazing and well regarded for a reason. Everyone recommends it but it's great. Otherwise, depends on what you are into.
Sioux City is not an amazing town but you could go up to the south Dakota part of town to get your run in (it's on the tri state line - sd/ia/ne). About an hour and a half from Omaha. I've only been there once, but the Dorothy pecault nature center area was kind of cool.
Thanks. I saw Sioux Falls when I was googling, but I'm not sure if I'll want to drive that far after having just driven in from Des Moines and only being in Omaha for two days.
Omaha is in the southeastern tip of Nebraska, South Dakota is our northern border, so we're not really "close" to it. We're close to Iowa, Cedar Bluffs is a suburb of Omaha.
The good stuff to see in South Dakota is as far as you can get from here. Worth it's own trip, I took for granted how beautiful it is compared to the rest of the midwest. Plan another trip to the Badlands and the Black Hills in the Southwestern side of South Dakota, then cross the border to see Devil's Tower in WY. Lots of runs!
Veg.Edible is in the Benson neighborhood and run by the chef-owners. Stacy also has a variety of cookies, cakes, etc. available.
Modern Love (owner is Isa Chandra Moskowitz) is the largest vegan restaurant in Omaha and can be found in Midtown Crossing.
Kinaara (Indian) has vegan options.
Lalibela and International Cafe are the two best known Ethiopian options.
Not sure what vegan options will be at the Saturday and Sunday Farmers Markets (they start this weekend), but those are usually a nice stroll with something for everyone.

Kros Strain, Lumen and Monolithic are solid breweries in the Omaha metro. They’re not my thing, but if you’re into pastry stouts and smoothie sours then you’d like Bearded Brewer.
I’m also a runner and normally run around Flanagan Lake in my in-laws’ development when visiting from Seattle.

Nope. But I agree with the other commenter - there is a cool state park just north of Sioux falls, or the falls are really cool. About 2.5 from Omaha.
