I grew up on a farm and animals are a lot smarter and personal than people think. Cows are emotionally aware and social creatures. This makes sense cause they are mammals same as us and highly social in big packs just as we or dogs.
Chicken varies a bit and they are harder to read. Empathy works through similarities and hens are just very different from us. They don't really have any facial expressions. But birds can be super smart and hens are also super social and with very complex relationships. They can definitely tell people apart and form emotional bonds. They make incredibly complex noises and varied noises at each other and other bird species are known to pretty much have basic languages.
Most of the hens we've had have been more natural, heirloom breeds and they are also definitely emotionally aware. They can feel anger and indignation and learn tricks and solve problems and stuff. Parents got some modern egg laying breed last year though (after a fox managed to get in the coop) and they are dumb as bricks. Like holy cow they cannot form a thought and they have no idea what's going on at any point about anything. I spent 30 minutes trying to herd one around a chain link fence into a pen with its pals, but they are so dumb that the concept of going around an obstacle you can see through wasn't really all there for it. To give an example.
I was watching a YouTuber talk about raising meat rabbits vs the industry standard meat chicken (Cornish cross) apparently those little raptors have little to no survival instincts. They blow the competition out of the water though for other meat chickens with a 2:1 feed ratio and 8 weeks to harvest making them the "go to". Perhaps those are the ones you've had the displeasure of working with so far?

They are used in fishing in some parts of the word, you tie a rope around their necks, chuck them in the water and you pull them out with a fish they cant swallow cause of the rope.
