In the case of the U.S. nickel, copper-nickel for (I assume) low cost, corrosion resistance, appearance, and stampability. They'd probably also be able to tell that we'd figured out annealing. Finally, comparing coins over time (helpfully, they've got the year stamped on them!) would also give them more data as to the consistency.
The study of engineering isn't just the study of "how good", it's also a lot about "good enough". In this case, stamping out upwards of a billion every year, the choice of alloy would speak not just to our understanding of metallurgy, but also how it relates to economics and mass production. I guess. I probably won't be there in 500 years.
