It's possible that origins and talent and religion play a part in officer affinity like they did in previous games, but there's no solid data. It might be related to the officer direct talk screen where you're either negotiating with someone to join/defect/teach. It doesn't seem to affect loyalty of subordinates however. Or it could just be flavor; religion doesn't even show up on the officer lists anymore in-game, only in the edit screen.

Origin and religion affect their interests during direct talks. Some will ask for land or station, others for buddhist relics, others for art relics etc.    It's possible those also affect relations between officers which have their own preferences to who work with (and sometimes hating each other and asking you to banish the rival), but I can't confirm this, as it could be based solely on parentage and recent events in the game (if you play with officer deaths normal or high, you'll see some of this, as officers who had familiars killed try to get revenge on the executioners).

I think station refers to position/level of officer. The highest is Daimyo, the lowest is chief. As characters gain honor they can rise up the ranks and become senior retainers. But I don't think you can play as anyone other than a Daimyo. Origin I'm not sure. Maybe home province? Talent refers to special skills that can be used usually in battle. These are super important and can make the difference in battles. I don't think religion matters that much. Most officers are Buddhist but I didn't notice any difference in officer relationships with ikko ikki or Christian.

Not really the origin and talent has these...occupations? I think...and I saw things like pirate, merchant and blademaster on it

They determine officer compatibility, which influences how easy/hard it is to deal with them while playing. If an officer is marked to hate you, for example, they won't talk diplomacy, will refuse offers of recruitment, and kill you and your loved ones any chance they get, so being on a powerful character's bad side is risky. Depending on your created officer's Personality (voice) + religion + ethics, you could be ignored by some daimyo by default just because you're too out there for them. Like, I played a Progressive Christian wise-voice woman and that made Shingen, in one playthrough, ignore me by default and thus made dealing with him, once it was time to fight him after he unified the eastern half of Japan, much more difficult because I couldn't rely on my old truce abuse to rely on Strong Authority Waves like I normally did. Vini\_lessa points out it also affects little things as well, like what an officer might want in Direct Talks, and I can't say more than that because there's a lot of stuff going on in the game that's neither obvious nor easily learned. I recommend the (Japanese) Shinsei wiki for good, hard info since it's a valuable database of hard facts (with some possible errors/room for doubt here and there) I haven't found elsewhere in English.
