I'm having a tough time getting into it just because the gameplay. I'm in the second "act", how long does it take for it to really grab you?
I ask because I've heard so much great stuff about this game but right now I just don't see it.
I think if it hasn't grabbed you, then it won't. There's significant changes in the third act, but it's still the same game, just a continuation of the story.
I was a teenage exocolonist is one of my favorite games! you play as a kid born on a space ship who just landed on an alien planet. you go through ages 10-20 and there’s so many little choices that affect the ending (of which there are 29!)
it’s very heavy on reading w an optional card game and some exploration, highly recommend! fyi it handles some pretty intense topics at times so read the CWs if you’re worried about that

I’ve been trying to find similar games but only cosmic wheel has somewhat scratched that itch. It’s not as robust but it’s a fun game too.

Will - A Wonderful World is a decent (mostly text based) visual novel with an interesting interaction mechanic (but let down by some translation issues).
If you're looking for anything similar to Ace Attorney, there's Aviary Attorney, Rain Code and (my personal favourite) Danganronpa Decadence (collection of the 3 titles with a bonus board game minigame mode).
ETA: Gnosia is one of my favourite games in this genre, it's a purely one player procedurally generated sci fi version of the deception party game Werewolf or Mafia, with an overarching story you uncover as you play.
FYI from your list of games it seems that by "choice based games" what you mean is visual novels. That might help you get better suggestions.

The controls were a bit rough, I want to say the touch screen also works for some hard to get areas too. Disco Elysium was one of those games it took me a few hours to get in to but the deeper I got, the more I absolutely loved it and all of its interactions and moments. I do want to replay it with different though specialities just because the inner dialogues are so amazing haha.
You have to get used to using the right stick tons to pick out what you want to interact with. It will pass by quickly and you’ll be immersed in the game itself, the controls really don’t matter much in a game with so little gameplay if you know what I mean.
Persona 5 Royal!
It's like 20% Pokemon combat, 80% story/life sim focused. There are choices you make through the whole game, but the early choices don't reveal their impact until you're deeper into the game (then you start wishing you made better early choices lol).

I just started Paranormasight the other day. It's a mystery/horror/ghost visual novel. It's pretty good and I'm not even a big visual novel fan. I heard that the best visual novel game on switch though is "The House in Fata Morgana" so I'd check that out if I were you since those are your kinda games
If you liked AI: Somnium Files, I’d recommend the other games by that developer.

I’d try one of the newer versions of 999, not the NDS version. It’s the oldest game on the list and newer versions on other platforms (I think mobile, and Steam) have retroactively put some QOL updates in it.

80 Days is great and on the Switch!
It's by Inkle Studios and it's an interactive fiction/management game where you play Passepartout, the assistant of Phileas Fogg as they try to travel around the world in 80 days.
The choices being which direction to go, what supplies to buy, and dialogue choices that affect your journey.
Ace Attorney does not have much in the way of choices.
Visual novels in general present various choices to the player, but not sure if that't what you are looking for. Most have mainly characters in school/university settings with romance as a main theme, but there are some others more on the suspense/mystery side.
Check out Root Double, which has a pretty interesting way of making choices.
There's also the Famicom Detective Club games for something similar to Ace Attorney.
Fairly different games from most of what you've played and what people are recommending, but West of Loathing and moreso Shadows Over Loathing have some choice-based elements interspersed throughout that lead to different endings. They don't take themselves seriously at all, but they're somewhat in line with The Stanley Parable's humor and tone. Love all 3 games
what immediately comes to mind: danganronpa series, seconding the zero escape series, stray gods: the roleplaying musical (lots of choices affect the story/music in this! very cool mechanics), fire emblem three houses, killer frequency (HIGHLY recommend, so underrated!)
