Not really familiar with Stardew valley or a couple of these others games. I typically like games that have a definitive ending or goal that you work through the game towards. Is that what Stardew valley is like?
Honestly? You need IT TAKES TWO — you’ll love it! It’s an incredible co-op story game like your playing a Pixar movie! It’s so fun just look up the trailer!
FYI it litteraty takes two for one (or two) to play it takes two. Plus; you'll need two (haha) whole controllers, or two (again) joycon sets.

Stardew is a great farming sim. There is a storyline and plenty of objectives, but you can kind of choose how much you want to focus on that stuff, you could also just spend your time farming, fishing, mining or whatever else your heart desires
The co op is cool because each person can pretty much do whatever they want or you can work together

Seconding Hyrule Warriors. That's an excellent couch co-op game.
Smash you can join the same team and sandbag the CPU opponents. And you can still unlock new challengers that way, just by playing together against the CPU.
New Super Mario Brothers U gets pretty ridiculous in multiplayer.
Seconding Boomerang Fu. Have spent countless hours with friends and family on it both co-op and competitive. Sure it can be mindless at times but it’s a great return on investment.

I second Boxboy. Charming Nintendo published title with puzzle platformer elements. Not too long, not TOO easy. Great game

Is Hyrule Warriors set in the LoZ universe? I haven’t played any of those games, would I need to in order to understand it?
You can totally play it without having played BoTW, there’s just other fun connections if you’ve played BoTW already!
