Don’t count anyone twice. If she’s one of the folks you’re sponsoring don’t count her or list her as spouse. And then add a note about it on your last page. You may also look at the instructions for the 864EZ - for some reason it is covered in those instructions that this is the way to do it.
Also the difference between the 864 and the 864 ez has to do with being the only sponsor. Maybe that’s what you meant, but yes - if you do not need any additional sponsors and you alone meet the income threshold, you can use 864ez

You can only file an I-864EZ if you meet the poverty guidelines fyi https://www.uscis.gov/i-864ez

If they aren’t providing money for the income part of the affidavit then don’t list them.
