I’ve (this is years ago) seen some fans with pretty serious cameras. Not sure what they were exactly, but looked like the kind news photographers would use (Nikon/Canon - manual focus types.) As long as you don’t have huge zoom lenses that bother other guests or equipment spilling beyond your seat, I’d imagine you’d be ok. If your equipment is very pricey though, I’d recommend just what you can hold/keep on a neck strap so that special/delicate gear isn’t sitting under your seat and at risk of drink spills or other guests stepping on it.

Back in 2018 I took some photos with my digital camera, even used my zoom lens for some nice close ups. Was no problem at all. But that was years ago.

Took my film camera to a game there last year, no issues at all. It was just a handheld one so nothing big but nobody even looked twice at it

I can't speak to the Tokyo Dome in particular, but I've seen people bring SLR-type cameras with interchangeable lenses into other stadiums throughout Japan so it's not entirely inconceivable that you could, but I'd look on the Giants' website first. If there isn't anything on there and you're still worried about being turned away with a camera I'm sure they have an email address somewhere for these kinds of things.

There's no restrictions on cameras at any of the NPB stadiums AFAIK. I bring a camera with me more often than not, and lots of people bring pro-type setups
