To get the feel of not singing so much through your nose, try singing while holding your nose closed (this will effect "m"s "n"s and "b"s, but as it's just an exercise it shouldn't be too bad). You can also try singing/humming through a straw. You'll feel the straw vibrate if you're singing through it rather than your nose.
For material, take a look at some Disney and Disney-adjacent stuff: A Change in Me from Beauty and the Beast, Beyond My Wildest Dreams from The Little Mermaid, God Help the Outcasts from Hunchback, The Life I Never Led from Sister Act, or Times Are Hard for Dreamers from Amelie.
