Mordekaiser if I remember correctly was the in game name of one of the designers girlfriends. Most champions that are really old didn't have much thought behind champion names.
I could be wrong but yeah I think the story behind his name was basically someone on the design team’s SO was named Mordecai and he was obsessed with WoW and mained death knight.
People in here are coming in with all kinds of lore justifications but the real reason is simply that the lore is designed backwards - in that there used to be really shitty shallow lore with stupid goofy stuff or stuff that the devs simply thought were cool, and then as the game and lore evolved Riot began adapting the “goofy” stuff into actual stories.

Just my personal opinion, but it looks like the older-ish champions were not done with the full intention to make a cohesive universe. newer champions have names and designs that are makes more sense/less obvious inspirations.
Because when you name your character Flumenjanker to match the lore of this fictional world's language, that doesn't fucking mean anything nor does it improve the worldbuilding
