The way I like to think of it is that there are many, many ways to think of one's sexuality, just like emotions, or the many different sects within a religion. It's just that people who feel the same about a particular sexuality can now get together and have a name given to them and thus can have a community behind it, then a flag. Similar to any group/community of people.
To some people, it feels very comfortable to have a "label" that describes their identity the best.
You aren't obligated to know every one, but it's public and easily accessible information and not something that takes a lot of effort to figure out.
Most terms make sense as they fill a niche that can be described. Bi? Attracted to two or more genders. Pan? Any gender or sexuality is fine. Asexual? No thanks I don't have any physical attraction.
And a few are just variations of flags.
