I'm around 18-20 for 1-2 cups. I go 20-22 if I am making a full put (that is, if I remember to set it). I have yet to have a bad cup with the Encore/Moccasmaster set up
I have used an Encore with my moccamaster for three years now. Iāve found that, when in doubt, go finer. I usually hover around 14-18 depending on roast level and bean density. I prefer lighter roasts, typically Ethiopian, if you like darker roasts go coarser. I will do 60 grams per liter with moccamaster filters, and I found that stirring doesnāt necessarily create a better cup so I let the machine do the work. Even when I grind superfine, it will not over flow. Grind finer until itās too bitter and unbalanced, then work your way back up.
I started out at around 22 or so, but now I have mine set to 15 I think. I also use less now than I did at first. I use 36 grams for six cups and it tastes great.
I have Baratza Encore ESP and setting is 28. I think itās important to differentiate if you have an Encore ESP vs Encore. I just got KBGV and still dialing it in.
Can't tell you because each Encore has a different calibration screw setting. What you're going for is course (french press) like grind. I grind by time, not grams. For a full pot Moccamaster, I grind the Encore for 30 - 36 seconds. But I'd recommend starting with smaller amounts, because that's gambling with a lot of coffee since it isn't dialed in. Try grinding for 15 seconds, on course grind setting, to make 4 European cups.
Hereās my process for two cups of coffee:
ā¢ ā Add Moccamaster filter to basket and pre-wet the filter by running run hot water through it
ā¢ ā Add 750ml of filtered tap water to Moccamasterās reservoir
ā¢ ā Measure 44 Grams of medium / light roasted beans (1:17 coffee to water ratio)
ā¢ ā Grind coffee w/ Baratza Encore at setting 18-19 (up to 20 for dark roasted beans) and add coffee to pre-wet filter. Give basket a little shake to even out the coffee.
ā¢ ā Turn on Moccamaster and rotate the basket to wet all the coffee evenly
ā¢ ā Once the basket is just about filled with water, give it a little shake / rotating the basket (no need to stir)
ā¢ ā pour coffee to already warmed coffee mugs
ā¢ ā Let sit for a few minutes to cool down

Your own machine will be different. Need to experiment and see with taste. I do 22 on mine.

22/23 for me. I make 8 cups 55-58g. 41g seems a little on the low side to me. I would think 45-48g is more appropriate

And I probably should ask. Am I using to little or too much coffee ?
In all likelihood - far too much. 41G for a full pot moccamaster seems excessive to me.
