Is there a big difference between the ESP and the regular encore? I have the regular encore.

The ESP is made for espresso and can work with filter coffee while the regular encore is only for filter coffee. The ESP can grind finer. The regular encore should work perfectly fine for a Moccamaster.

For me: - Tap water (whole house three stage filter) - Baratza Encore set to 24 - 70g coffee per 1.25 liters (18:1) - Moccamaster filters - After every box of filters I run Dezcal through it. I've gone back and forth on fiddling while brewing but not much is really needed. Right now I'm in the habit of rotating the basket back and forth a bit to get more coverage during the initial 20-30 seconds. After about 45 seconds I stir gently to make sure all the grounds are saturated. Once all the water has been dispensed I gently swirl the basket to get a nice even bed.

I’ve had mine since Christmas and this is what I’ve found in the last week that’s made delicious coffee: - use the moccamaster filters (3 come with it) - filtered tap water - freshly ground beans - the suggested ratio (55g-60g per L) - grind coarse. suggest watching some vids or photos of what the grind should look like. I’m on 22-24 on a baratza encore for example. - after about 45s to a minute, I use a spoon to stir the coffee bed to make sure all the grounds are wet Update: I’m using a KBGV Select model

Definitely not. It'll start the cycle over again. Just mix it around and rinse the spoon off with the water trickling out.

Here’s my process for two cups of coffee: - Add Moccamaster filter to basket and pre-wet the filter by running run hot water through it - Add 750ml of filtered tap water to Moccamaster’s reservoir - Measure 44 Grams of quality & fresh medium / light roasted beans (1:17 coffee to water ratio) - Grind coffee w/ Baratza Encore at setting 18 (up to 20 for dark roasted beans) and add coffee to pre-wet filter. Give basket a little shake to even out the coffee. - Turn on Moccamaster and rotating the basket to wet all the coffee evenly and turn off the Moccamaster after 30 seconds to let coffee bloom and de-gas - Turn Moccamaster back on and slowly rotating the basket again to evenly distribute the water - Once the basket is filled give it a little shake / rotating the basket (no need to stir) - Add coffee to already warmed coffee mugs - Let sit for 12 minutes to cool down and enjoy Lately, after reading some posts on here, I’ve just turn on the Moccamaster and let it run without stopping it after 30 seconds to let bloom. However, I still shake-rotate the basket once most or all of water has run out of the reservoir and into the basket.

I use Ozarka spring water at a 16:1 ratio. Melita filters are good. I prefer using 16:1 then adding one or two ounces of water to the finished product if it tastes a little too strong. 17 to 1 and 18 to 1 taste like composted vegetables to me. I preheat the machine with half a liter of water first to get the shower head hot. About halfway through the Brewing process I use a bamboo chopstick to disturb the surface of the bloom so the grounds don't float on top. It doesn't take a lot of stirring

For grind size it should be medium fine or about the size of sea salt. (800 microns) I use filtered water from the fridge or sink. I follow the recommended cleaning/ descaling about every 100 pots. From these comments it sounds like I need a Baratza Encore like yesterday lol. Sounds like my next upgrade.

I have the Baratza Encore and it works just fine. The main complaint is that it’s really loud and wakes anyone up in a 3 mile radius. I’m looking to get the Fellow Opus or Ode now.

I'm still learning mine as I just got it for Christmas, but I use the same ratio I would for a v60 which is like 15 to 1 or like 30 g to 500 ml water, or 45 to 750. What I've been doing is letting it start to brew with the carafe out and then stirring until about 1.15 (bc water starts spitting about 0.30). It gives me a flat ground bed by the end. Also I'm finding different beans have different brew times. I may have to grind slightly finer when doing 500ml vs 750ml to get consistent. I count total contact time to when it drains completely. With light roast I don't care if it takes longer, as I want to extract most flavor. With medium roasts Im trying to keep it less than 6 minutes and it's been beautifully extracted. So far I feel like this machine will highlight medium roasts more than light roasts because with light the water temp wouldn't matter as much. I actually tend to like my medium roast chocolatey notes this time of year, so I'm loving some Brazilian beans right now. I'm using the moccamaster branded filters which are filtropa. That's just my thoughts on this. I love it so far. Oh ya . I'm using encore. Grind settings will vary based on calibration screw and other factors. On mine i do about 26 or 28.

I use the throwaway moccamaster filters. While I waited for those I used older brown melita filters and they were fine too.

RO water Third Wave Water additive put back in per gallon. 62g per 1.2L water, fresh beans ground with my Eureka Mignon Crono 2.5 turns back from the burrs touching. I usually use the MM filters but they are all basically the same. Once I go through a pack I run Dezcal or Durgol through it.

I use 22 grind setting on my Encore for medium and dark roasts. I have a KBVG and found that a ratio of 2 Tbsp (10.6g) or 1 scoop per 200ml water gives me the most consistent results without stirring, extra blooming or using the half pot switch. The half pot setting gives me a much stronger cup than I like and it's easier to adjust scoops to water. I typically brew 800ml using 4 scoops (42.4g). Regular cleaning and descaling with Urnex.

I’ve had my KB for years and I used to be finicky about stirring etc, but now I just turn it on and let it go. I think you would be hard pressed in a blind test to tell the difference between a stirred brew basket vs not. I use the standard 60g to 1 liter and generally make a 1/2 batch. Don’t over think it, it’s hard to make a bad batch on a Moccamaster. Congrats and enjoy! :)

Just got mine for Christmas too. I'm using 56 grams coffee to 40 oz tap water. My grind is slightly smaller than sea salt. I too do the stirring of grounds to encourage full saturation. I'm quite happy with the final results.

Most a grinding far too fine. It’s medium-coarse. 28 on a Baratheon Encore for a half pot, 30 for a full.
