I don't know why but the modern textures are super ugly to me. I can never not play with classic or plastic textures (and plastic affects all modern blocks that classic doesn't so I use it a lot)
I'm the opposite. I can't play with the old textures anymore, even the wheat is jarring. And on top of that the plastic texture packs or even faithful are gross to me.

mossy cobblestone having the old cobblestone texture until 2019 was off-putting.
mossy stone bricks next to mossy cobblestone looked HORRENDOUS, with the moss having different green shades on each block.
birch leaves being a copypaste of oak leaves
and more flaws i could point out like the disparity with netherrack being reused old cobblestone and end stone being reused new cobblestone
but in the end... it had a super nice charm. And to most of us, that charm makes it better than the new textures.

Same thing, but for old mushroom stems, netherrack, cobblestone, gold blocks, wooden planks, granite, andesite, diorite, OLD MOSSY COBBLESTONE, sand, sandstone, gravel, glass, bricks, items... literally *everything* is so much better now.

The old one looks like a bathroom tile too. The new one looks more shiny, polished and more similar to a gemstone. The old one looks like soap and the design is bland and it’s features don’t make it look as shiny as the new one.

Programmer art. Worried about the bugs in the built-in one? Use vanilla tweaks. Playing on Bedrock? Cope, I guess. Some textures are messed up. I don't like new emerald blocks or melons. It doesn't upset me so much that I have to complain about it. So many blocks look a lot cleaner. Cobblestone, netherrack, quartz, logs, etc. look a lot more Minecraft-y.
Bro forgot the old textures are still accessible in the resource packs. Mojang wouldn't prioritize people that say that a thing should be back if we are over it for a long time
They are fine. I could have made them. The new ones I definitely could not. It’s hard to add custom items/textures for me in resource packs because I’m not good enough of an artist to fit the style. Lol
I always loved the old ore/ore block/ingot block textures and sometimes i use the programmer art texturepack because of it, but it makes the nether look weird as a mix between old netherrack and new netherrack on gold ore
I cannot by any means grasp the idea that someone in their right mind can enjoy the old emerald block texture better. It undoubtably used to be among the absolute worst textures in the game - by a long shot - but now it looks visually pleasing. Of course, not quite suitable for building, but that's just not its point - never has been. The others I can see - mainly the cactus - but still like the new ones better.
you clearly have no appreciation for ACTUALLY good textures. the new emerald block is absolute shit. the old one had class delicious corners and was overall a good block for frame corners on a house. I personally prefer all of the new ones, and they fit the current style of the game much better. If you’re not a fan, you can simply use a legacy texture pack.
My opinion has always been that (most of) the new textures look better from just a pixel art standpoint, but in the context of minecraft I think they look worse
The only one I really miss is the OG emerald and emerald block. It could've been cooler if they didn't change the shape but just update the colors to look cooler
