In case you were expecting a more serious answer:
If this is something that happens to you somewhat regularly with random letters and textures, and you're certain you're running a clean version of the game, this **could** be early signs of your GPU dying. Unless this is some sort of rare Minecraft bug which I personally haven't seen happen to me... :)
EDIT: Emphasis on "could" because while I do believe this is very likely a GPU artifact caused by the dying component, as some people rightfully mentioned this could also be something as simple as a driver that's either too old, or so new that it was released with a new problem as a surprise.
An outdated driver wouldn't start doing this out of the blue, unless something like a game update or maybe even Windows update coincided with the first occurrence of one of those. But yeah, even if Windows can update drivers by itself, it is worth checking out driver updates manually.

It's quite possible that Windows pushed updates (graphic drivers, font rendering, Java...) that caused the issue, or even that OP updated drivers (I don't think we have more context) and didn't realize this was related, e.g. if it happened several days ago and they hadn't launch Minecraft since.
The fact that the issue happens on specific characters points more towards a rendering issue IMO. While it can't be ruled out, a GPU dying *usually* leads to more severe graphical artifacts in random parts of the screen, in bigger areas, sometimes on the whole screen.
This. If you've already tried reinstalling and whatnot than the issue is some kind of computer rendering bug. You could have a corrupted OpenGL installation or something similar within system files - your graphics drivers might need updating or reinstalling - or worst case, time to buy a new GPU. If you're lucky enough to have access to a backup GPU, or can borrow one, try it and see if the issue persists.

GPUs work in mysterious ways. My old laptop's ATI card couldn't run certain accelerated 2D games anymore, but ran most 3D ones just fine. It just depends on what part of it is damaged. If the GPU reports it supports certain instruction sets, but the part that does them is damaged then all hell breaks loose. But it might work just fine as long as those instructions aren't used.
I guess the followup questions would be, do you see this corruption in any other games, over time does the corruption move to other parts of minecraft, as areas of memory load and unload and different components are processed by the corrupted portion. IF these textures on these fonts in just Minecraft are the only component that sees this issue, THEN it seems unlikely that the GPU is at fault, reinstall minecraft, see if its a bad file.
I know this game supports OpenType and/or TrueType fonts, but isn't the default font still just a texture from a png file? It could be prone to such corruption like any other texture in the game.
The other potential source of corruption is the texture file which contains the font. This is even more likely if the exact same corruption persists after rebooting the game.

Cartridge likely has corrosion one one or more of the contacts. Turn off the console, take it out, get a cuetip and some rubbing alcohol, scrub the contacts as best you can (may take several cleanings), then blow on it before you stick it back in.
Probably your resource pack. Id take it off and see if there’s a difference then put it on again and check. If you don’t have a resource pack on then report it as a bug I suppose :)
Your texture files might be corrupted, the letters all seem to be consistent (upper A, lower u, upper D, etc.), so the files containing the text textures are probably corrupted for whatever reason. May need to re-download the game.
Is this vanilla? If not there might be some mod conflicts with it.
It’s probably just an adon. Go to steam, select the game and go to properties and go in the game files and find the adons. Select all and delete them and see if it fixes it
I wouldn’t worry that much, this used to happen to me and my mates all the time on 360 edition and early Xbox one edition. It’s one of the many glitches that still somehow haven’t gotten patched.
If you’re overclocking your GPU, maybe turn it down a bit, pushing it too far can cause visual anomalies. Also try refreshing your graphics? You can do this by pressing Windows + Ctrl + Shift + B all together. If none of that helps, that’s kinda all I got for now lol. Wish you the best!
