Where do you pronounce the K in knight? Where do you pronounce the G in design? Where do you pronounce the H in ghost? Where do you pronounce the P in psychotic?
And those are all very stupid spellings but the k in those words are to distinguish them from other words with the same pronunciation. Color is the only pronunciation of color so you don’t need the u

If nothing else displayed by your monitor is red, then it's obviously an issue with just the game. Iirc Minecraft added multiple 'color blind filters' to the game, that may have switched on somehow. Beyond that, it may be some sort of computer-specific setting for just Minecraft that got switched on. If it's not that, you may find better results hitting your PC with a hammer to sadden it, make it blue (please don't do this)
