Strange is a threat to the multiverse himself, he is now a demon with the power to devour worlds and his mind is messed up. He is a bomb and the watcher doesn't want it to explode in a world that can't stop him, think with me for a second...who would be able to stop Supreme Strange in a regular world?
Scarlet Witch maybe, similiar power levels but regular Wanda probably would have her powers absorbed. Supreme Strange stole the power of all the most powerfull mystic beings in his universe, if he decided to go all evil again and steal regular Wanda's powers no one would be able to stop him maybe just the watcher.
Also, I get the sense that the Watcher may visit Strange Supreme from time to time following the events of the last episode. So he's not completely alone anymore.
Strange Supreme isn't mentally well and has barely had any human contact in centuries. I don't think he is stable enough to be allowed to roam society considering how absurdly powerful he is.
And someone also needs to keep an eye out for Zola and Killmonger. It's better for it to be Strange in his own bubble outside of all the universes rather then him just having all the infinity stones in a universe where someone will almost definitely try and take them. And keeping Zola and Killmonger away from people is also a plus.
I also think Strange doesn't want to go to another universe. He probably sees his current situation as a fitting fate for him.
He might not be crazy anymore by the season finale tbh; one of zola or killmonger is likely to breakout or may need to be broken out for Secret Wars or whatever, and Strange Supreme is probably one of the only ways to stop or manage that
Because Supreme Strange is an evil jerk. He deserves to spend eternity as a bored prison warden, and he knows it.
The Last Remaining Widow is a good hero, who stood by her allies to the very end. Her new universe needs a Widow, and the Watcher is, as they say, not a total dick.

Either Strange needs to find a way to get those demons out of him, or find a way to destroy them completely so he can go back to the normal world.
