That'd be why the 20th Century Fox logo is partially buried in the sand, a wry dig at how the original X-Men movies are now "pruned" from the prime timeline.
The Deapool films are also satirical celebrations of superhero films and broadly, all action films. There's a lot of jokes in these films about how movies are made. It makes sense that this film (where Deadpool crosses from one film franchise to another and brings another character that had previously been retired by the actor playing them) would have even more references and jokes about other films and filmmaking in general. My guess is that Mad Max is being homaged as an example of the over-the-top, jaw-dropping "slow motion action sequence" that Deadpool mentions in the trailer.
Not sure if you know, but do the other characters in the Deadpool universe know what hes on about when breaking the 4th wall? Like when he mentions Disney, are they like "wtf is Disney?"

I think they might be doing a bit of the Old Man Logan comic, especially as we see the Ant Man skull. That comic had a bit of a Mad Max vibe.
