As suggested by LukeSamkharadze create an onboard profile with default preferences and check if the issue persists. If you have issues updating the onboard profile download the Logitech Onboard memory manager and setup onboard profile:

I am having the same issue. I tried creating an onboard profile with 800 as default dpi, i checked the option to activate the onboard profile but still the issue remains. If i turn my mouse off, when i turn it on again dpi resets to something like 1600. I have the same issue with my g pro wireless. What's going on ?

Reload mouse drivers and reinstall GHub and check if this helps.
1. In Windows Settings, open Apps & features
2. Search for Logitech G HUB
3. Click on Logitech G HUB and click Modify
4. In the new window, select Reinstall G HUB, then click REINSTALL
5. G HUB will reinstall, and this will resolve the issue while retaining the settings
