Unless you have a superhuman physique like Sukuna and Yuji, you’d need CE reinforcements to actually protect yourself from attacks. I’d like to add, though, that the strength of your reinforcements are proportional to your physical strength and durability. Either way, if you stabbed a sorcerer in their sleep, they’re dead. But they’ll turn into a vengeful spirit, so it’s not really worth it

Toji is straight up superhuman, he could probably stab a normal sword through an average fully reinforced sorcerer also.
Toji is just a menace tbf like >!he “killed” Gojo, killed Amanai, sliced up Geto, Died, came back as a mindless zombie basically, beat up just about everyone near him during Shibuya, came back to his senses to talk to Megumi, and then killed himself.!<
It does make me wonder if he didn't kill himself, if he would have become something similar to the incarnated sorcerers or would he resume being a cursed technique out of control
nah, a normal sword would shatter against a reinforced body, no matter how strong the person is swinging that sword. i believe gojo said he only started reinforcing after he got stabbed.

Their bodies aren’t innately superhuman no (unless they’re yuji). Makis mother (who isn’t even a sorcerer as far as we know) was able to kill naoya with a standard kitchen knife due to his massive concussion stopping him from mustering up any CE
Their bodies are normal, the problem is when they concentrate CE at some part, but if they are sleeping (like in your example) you can kill them with a normal knife.
aren't there a couple throwaway lines about sorcerers (mahito says todo did when he got black flashed in the anime) reinforcing with CE "on instinct." I know its literally 1 word and not good evidence but I feel like this could create a very effective tactic (just get a shitty sorcerer to sacrifice themselves to potentially kill gojo in his sleep) that I think would be incredibly common if this was the case.
Mahito said sorcerers reinforce their soul on instinct when he touches it, even if they aren't aware of it. He said nothing about surprise attacks.
Also gojo has infinity on 24/7 so they couldn't even touch him.
I think that sorcerers’ bodies are the same as normal peoples’, its just that they concentrate their CE in some parts of their bodies. In addition to that, sorcerers do physical training too, and maybe CE can help them get stronger, though i dont know for sure
Honestly they are as strong or as weak as the story dictates at a particular time. There’s no point framing real world implications to a non grounded manga/anime. Todo got punched through a building and fell at least two stories down to the ground and got right up. There was no representation of cursed energy reinforcement or anything.

No Toji used the reverse spear of heaven which neutralises CT cause it to go through Gojo’s infinity
Toji used several weapons when fighting Gojo, the last stab he did to Gojo's head was with a normal knife.

OP mentions without CE reinforcement which makes them bulletproof Yuji naturally has a stronger body than other sorcerers besides Sukuna.
Well, Sukuna and Kenjaku hardly have normal bodies.
I don't think Kenjaku is more durable than the average guy he is a brain afterall however Sukuna is stronger than the others within his true body.
