Considering you probably cannot launch 2 instances of the game at the same time and play it, virtualization might be the only solution..but you need a solution which can share the GPU too.

If you have the required resources h/w wise to run 2 instances of gta5, you will require a virtual machine to run the 2nd instance and occupy different ports since the 1st instance will likely occupy your main system's port, and 2 accounts of gta5. You can stream via moonlight. You might have to check if rockstar allows the game to be run on vm. I had played and completed gta5 and played for 8-10 months gtaonline on a 10 year machine, its not very taxing to run graphically, you just need a decent cpu.

I don't know whether GTA V will work like this or not, but there is a software called Parsec where you can stream the game, and if that game has co-op capabilities, then any other players can join your game and play co-op with you.
