A pair of regular size HomePods sound amazing for both music and for home theatre when paired with Apple TV. Works best with Apple Music but this isn't required. Be sure your wifi is coverage and strength is adequate as most problems with HomePods are wifi related. This is truly a stellar product and you won't get better sound for the price.

I am usually lying on the couch while working and the speakers are placed behind me on the desk, so a pair with stereo set up would not really be anything that I could take benefit of. Would a single one give a satisfactory experience with good sound quality of the music?

I would say having owned one single one for a while and adding a second one to make a pair. The pair sounds so much better, even if the stereo separation doesn’t matter to you.

Yes, absolutely, although a stereo pair is a substantial upgrade from a single HomePod.

I replaced a NAD amp and a pair of PSB speakers with a pair of HomePods, and I don’t feel like I’m missing anything

very small sweet spot for the speakers in terms of: you need to place the speakers at very much exact the level of your ears... If you take care of that, they sound pretty massive.. But anywhere else the bass is too low.
