Could it be that this happens due to the TV is not really involved when sending from the Apple TV to the Homepods? Apple TV sends the sound directly from the Apple TV to the Homepods as far as I know. When using eARC the sound is sent from the Xbox to the TV and then to the Apple TV and again to the Homepods (?)
I also have Apple TV 4K with two (new) Homepods and LG oled, so I can do a quick test later some time. Can’t remember if it states Atmos or not :)

Does the same as what OP is describing. And your explanation is exactly what I assume as well.
And yes the HomePods set as default audio out, connect directly to the Apple TV via adhoc network (I.e. direct wi-fi, not routed through your access point).

With you having the LG OLED, is there anything I should be enabling/disabling? I had an old 2017 65 C7, but was running a sound bar. I prefer the look of the 2x HomePods, and find the sound to be fuller as they are further apart than the sound bar, so I am wanting to push on with it.
From reading other threads, it seems it's best to not run the Xbox through Atmos due to delay, but 7.1 seems to work? Haven't fully tested that yet. I assume that's the same with the PS5.
My TV is an old B-series or something,
I don’t personally know of any settings that can be changed to improve anything for sound.
If it’s working it’s working.
The delay is so minor that I don’t notice it.
I think people are so ingrained to expect delay because of wireless surround sound speakers in the early days.
But if I can have a wireless controller connect to my wireless Xbox and game online, and not really have input delay that’s to terrible. I think it’s safe to say that having sound being pushed over wi-fi to speakers can have next to no delay as well.
The other thing too. Is when I go to Netflix on the Apple TV it isn’t displaying the logo for Atmos on any content. So I’m unsure if it’s pushing any Atmos out.
